The first Cosmo beer brewed April 2020 and open fermented before 26 months ageing in shiraz and cabernet French oak barrels from Renzaglia Wines, O’Connell, and Ross Hill Wines, Orange. Bottle conditioned 28 months before release in Spring ’24.
Light carbonation and low acid let the barrel character shine through with buttery notes akin to a well oaked Chardonnay. Dry with a medium bitterness and restrained funk. This is a classic showcase of how approachable a barrel aged farm house beer can be.
Made with 100% NSW Riverina grains and Bemboka hops.
